Creamy Avocado Cashew Spread.

It’s avocado season ! Avocado has to be my second favourite fruit after mangoes! Like easily! Here in Ghana, avocado is usually a colourful fruit topping for Abomu (yes Avocado is a fruit), added to salads, eaten as an sidekick with Ga Kenkey or chopped roughly without seasoning as a form of bread filling.

When not in season it costs about GHC 7-10 and you can’t be guaranteed of a rich creamy avocado more of a watery slightly bitter taste. But with this abundance of avocado there’s no better time to fill up on the rich, soft and creamy fruit for the unsaturated good fats it gives your body.

I recently purchased a Moulinex food processor which made this dip so much faster and easier to make. Literally seconds! How have i never thought of getting a food processor until now? I have no idea but boy am i glad i made this decision!

This dip recipe brings together nuts, avocado, fresh herbs and spices to create a healthful balance of texture, flavour, vitamins and minerals. I used cashew nuts for it’s divine nuttiness and creamy insane flavour and of course the goodness of heart-healthy fats it contains.

Avocado & Fresh Herbs

You can use your favourite nut in this recipe as well. It’s a simply must-try especially if you are looking for a plant based spread for your sandwiches. It’s so versatile in it’s use. Spread it on a tortilla , on a white bread , dip plantain chips in during a UCL game with the boys or even with chicken wings. It’s that great!

The ingredients needed are easy to find in any supermarket near you.

You’ll need:

  1. 1/2 Avocado

  2. 1/2 red onion

  3. 3 cloves of garlic

  4. mint and parsley sprigs ( a handful of each)

  5. Apple cider vinegar

  6. 1/2 lime

  7. 1/2 cup unsalted cashew nuts

  8. sesame oil
