Chicken & Mushroom Stir-fry: Savory Recipe For Eye Health.

This is not only a super quick delicious recipe for lunch or dinner but it’s also full of body-loving nutrients from protein, beta-carotene, fibers, vitamins etc which are good for a healthier vision. Also as the price of tomato is currently through the roof, this recipe will also help you save money whilst ensuring you and your family eat healthy.

Oyster Mushroom is in season and they are amazing superfoods to boost your immune system and also lower your cholesterol. Use fresh oyster mushrooms or shiitake mushrooms to boost the flavor of the sauce.

Baby carrots add the much needed vitamin A your eyes need for optimal health. I prefer these for stirfries as they are easier to cook with a delectable bite.

What meat substitutes can be used for this recipe.

Aside chicken breast, you can also use beef fillet or prawns although these are more pricey in comparison.

What sides can I enjoy with this stir-fry?

Sides to enjoy this stir-fry with includes noodles, spaghetti and rice. As a bonus, stuff them in a tortilla to make a chicken wrap!

How can I make the stirfry vegetarian?

Switch out the chicken with more mushroom, tofu and more vegetables.

Ingredients

1 full chicken breast sliced thinly

Oyster mushrooms

1 whole red onion diced

1 green bell pepper thinly sliced

Baby carrots

Dried chilli pepper

3 Cloves of garlic thinly sliced

Minced ginger

1 tsp Light soy sauce

1/2 tsp Dark soy sauce

1 tsp Oyster sauce

1 tbsp Corn Starch

Vegetable oil

Salt

Let's get cooking!

1. Sprinkle a tsp of salt on chicken & coat chicken with cornstarch.

2. Lightly fry ginger and garlic over medium-high in tbsp of oil till fragrant , stiring quickly to prevent garlic from browning. Browned garlic is bitter 🤭

3. Pour chicken into garlic ginger mix on fire. Stir quickly and through till chicken becomes whitish for two minutes.

4. Add mushrooms in chicken and stirfry  , followed by carrots , chilli flakes and diced onions. Stir for a minute till mushrooms are gently softened and onions still have a bit of crunch.

5. Pour both light and dark soy sauces in followed by oyster sauce. Stir through. Add a tablespoonfuls of water if too dry. Stir for a minute to incorporate flavours.

6. Add sliced bell pepper lastly and stir for a minute. Finito!

7. Dish out whilst hot. Serve with noodles or rice with a dash of your favorite chilli sauce .
