Apr 29 A simple tilapia Stew Recipe.

This Simple Tilapia Stew took only 5 ingredients and 25 minutes to make and my oh my the deliciousness of this is mwah 😘👌🏽✨ The cooked-in-skin potatoes was the perfect carb but you can totally do sweet potatoes too. Nothing spoil😄. Also white cod fillet will perfectly work with this recipe too.

Prep time: 5 minutes

Cooking Time: 20 minutes tops

Servings : 2

Ingredients :

1 large carrot 🥕chopped into large chunks .

3 medium sized 🍅

1/2 garlic 🧄 minced

1 red or white onion 🧅 sliced

1 descaled Tilapia marinated in Anise and Rosemary for 30minutes.

Spices & Flavourings needed :

Nkiti kiti ( Anise seed),

Curry

1 teaspoon of brown sugar / honey

1 teaspoon Rosemary

Ada Salt.

Method :

Pour 4 tablespoons of olive oil or vegetable oil in a deep saucepan.
Lightly sauté garlic and onions together until the onions caramelize to a very light brown color.
Add carrots next.
After 2 minutes, the chopped tomatoes, brown sugar or honey, cayenne pepper, rosemary and curry goes in. Pour in 1/4 cup of water to cook the tomatoes for 15 minutes.
Cut tilapia until two and place in the sauce. Cover and cook for 5 minutes. Taste for salt and add as appropriate. Gently flake the skin of the Tilapia with a fork, when it comes off easily it's cooked.

Stew is done when the tomatoes takes on a darker color and the beautiful fish oils work their magic into the sauce to produce a stunning shine. No dulling. Tilapia drippin💦.

This was so simple to cook but the flavors brought on a divine palate elevation! All the natural juices from the marinated Tilapia worked it's magic too! You can omit the cayenne pepper or reduce it if you don't like too much heat.
