Beef Stuffed Mashed Yam Pancakes.

There’s so much delicious joy in this recipe because these stuffed yam pancakes are multi-functional as both a mid-morning snack, light dinner and any leftover filling can be used in wraps, topped on top of white rice in fact the yummy possibilities are endless! And also in the middle of an economic crisis and high food prices, trust that you need such life-saving meals in your fridge.

Mashed yam can either go right or left depending on the variety of yam used and for this recipe, I highly recommend you use Pona yam for it’s cloud softness and easy yield to being mashed. That’s a sure guarantee for a super tender yumminess.

You can go with any protein filling you like for this yam pancake. If you are on a plant-based diet, substitute the beef for tofu, pumpkin or some mushroom. Trust me still incredibly delicious!

Can These Yam Pancakes Be Frozen?

Absolutely! Or even refrigerated. Keep them well away from the frozen meats section in ziploc bags to avoid any contamination . Just warm them in the microwave and you are ready to snack!

Ingredients:

  1. 4-5 slices of Pona Yam

  2. 500g top side beef cut into mini squares.

  3. 1/2 red onion diced

  4. 1 green bell pepper

  5. 2 garlic cloves chopped

  6. 1 tablespoon chopped ginger

  7. 3 -4 Tablespoons light soy sauce

  8. 1 tablespoon brown sugar

  9. Handful of dry cayenne pepper chopped

  10. 3 Tablespoons melted butter/magarine

  11. 1/2 teaspoon grated nutmeg

  12. 1/2 Tablespoon cornstarch

  13. Vegetable cookking oil

Prep Time: 15 minutes Cooking Time: 25 minutes Total Time: 40mins.

  1. Slice and peel yam and slice and dice them up in huge chunks. Wash under running water and boil in slightly salted water for 10minutes or until yam is very tender. Take off heat and set aside.

  2. Make soy sauce mixture by combining soy sauce, garlic, ginger and sugar. Stir until well combined. Set aside.

  3. Pour cut up seasoned meat chunks into a heated lightly oiled pan. The oil can be about 3 spoonfuls of vegetable oil. Season meat with a few sprinkles of salt and cayenne pepper if desired. Shallow fry the beef squares and once lightly browned take them off and set aside.

  4. Add a little bit more oil back to pan and fry onions until slightly softened, followed by green bell pepper and chopped dry cayenne pepper. Cook for about 2 minutes and add pour in soy sauce mixture. followed by beef squares and 1/2 cup of water or chicken stock. Taste for flavour. Add more soy sauce if more flavour is needed.

  5. Make a slurry with the cornstarch and pour into sauce. Once sauce thickens remove from fire

  6. Mash cooked yam by adding melted butter/magarine and grated nutmeg. Mash until yam is smooth with very little lumps.

  7. Place a plastic in a small bowl or use a ziplock bag cut into a large square. Spoon mashed yam into the bowl , press the bottom and sides to create a well. Spoon a mixture into the bowl followed by another mashed yam on top of the meat mixture. Mould the mashed yam around the meat mixture and create a circle or square shape.

  8. Pour 1/4 cup of vegetable oil in saucepan and gently fry the yam pancakes until golden brown. Serve hot or gently warmed up.

I highly recommend this as a great snack also for your children. The mashed yam will be easy and delicious for your toddler whilst the meat will be a yummy surprise for them or not depending on how they react on seeing greens 😜.
