Crispy Golden Fried Prawns Recipe

Golden fried prawn is on every Chinese restaurant menu as a starter. It’s simply addictive with an exterior crunch and a soft-center with the succulent shrimp or prawn nestled within. I’ll never forget my childhood days when my Dad introduced us to Asian cuisine and it started with Chinese cuisine followed closely by Indian dishes and this was highly influenced by the fact that he had Indian business partners. As I got older, Regal Chinese restaurant became a family favorite with most birthday dinner celebrations taking place at this iconic 30year old restaurant. The golden fried shrimp is my Mom’s all-time favorite and it goes quick once it’s served! You know how you are the youngest at the table and you are permitted only one prawn but the darn thing is super delicious? Yeah, now that you are an adult you can make it at home and eat as much as you can!

Golden fried prawns is simply one of those luxurious starters to serve at any premier league game day, a romantic dinner or cocktail party. All you have to do is marinate the prawn in a simple marinade and dip into a batter then medium-deep fry. You can deep fry it as well but if you are more conscious about the amount of oil then I recommend medium-deep frying. Medium-deep frying is filling a pan quarter-way and you’ll have to flip the prawn only once. The only trick to get it crispy outside but succulent and juicy inside is your batter. The batter mix is made up of very simple and easy to get batter ingredients.

You can choose to use shrimp instead of prawns for this recipe. I used tiger prawns for its meatiness and higher value.

Here’s what you need:

INGREDIENTS

Prawn Marinade

1/2 kg Tiger Prawns

1 spoon Chinese Cooking wine

Salt

Powdered Chilli Pepper

Batter Mix

1/2 cup flour

1 egg

1 teaspoon bicarbonate soda

1 teaspoon cornstarch

1/2 teaspoon salt

And

1/4 cup cornstarch for coating

Cooking Instructions

1.Start by washing and peeling the prawns leaving its tail end on. Devein the prawns (making slits on the spine with a pairing knife or any sharp small knife and removing the dark stringy veins.

2. Marinate prawns in Chinese cooking wine ( substitute for this can be gin or dry white wine), ground chili pepper, and 1/2 teaspoon salt for 5 minutes.

3. Make the batter: Beat egg, add baking powder , bicarbonate soda and flour with 1/2 cup of water. Mix until a slight thick slurry has formed.

4. Pour 2 cups of cooking oil in a deep frying pan to quarter way and heat over medium-high heat.

5. Dip prawn by holding the tail in cornstarch until it’s well coated , next dip in batter until completely covered.

6. Fry prawns until golden brown, turning only once for one side to fry.

These golden fried prawns are simply delectable! You can add other spices to the batter mix to switch things up.

Serve hot as a side with Jollof , fried yam, potato fries or steamed rice. Serve as an appetizer with a sweet and spicy Thai chilli or homemade red chilli sauce. Divine! Your guests are sure to be impressed too!
