One-Pan Lemon Garlic Scallops Pasta Recipe

This meal is beyond delicious. It's the meal of choice for your selfcare weekend or a date night dinner at home. It gives you restaurant quality vibes. What makes it seriously sensational is not just the mind-blowing flavor but the simple ingredients that come together so beautifully in one pan .

I was simply thrilled to find scallops in Accra recently, like I never imagined I'd find any. Thank goodness for international trade!

What are Scallops?

Scallops is a general name given to the meat of bivalves. Scallops are high in protein and very low in fat which makes them a healthier choice in the seafood chain. They have many other health benefits as well.

Did I mention how you simply need very little ingredients for this divine meal? See I'm not joking…basically linguine pasta, unsalted butter, parsley, scallops, fresh rosemary, garlic, lemon and dried cayenne pepper. That's it. By the time you're done cooking, you'll be stunned!

It takes less than thirty minutes to make this linguine dish. If you're allergic to scallops you can substitute it with chicken just cook it a bit longer. If you want faster cooking Spaghetti then use regular spag instead of linguine which takes about 8-10 minutes to be cooked through.

A vegan version would be to use vegan butter and brown mushrooms with the semolina linguine pasta.

Prepping time: 5 mins Cooking time : 16 minutes Total time: 21 minutes

Cooking Utensils

  1. Chef Knife

  2. Deep Saucepan

  3. Chopping board

  4. Frying pan

Ingredients :

  1. Linguine pasta

  2. Dried Chilli

  3. Scallops (500g)

  4. Fresh Parsley

  5. 5 Cloves of Garlic

  6. Halved Lemon

  7. Two spoonfuls of unsalted butter.

  8. Salt

Instructions

  1. Pour three cups of water in the deep saucepan and add about 3 tablespoons of salt. Allow to boil before adding linguine. Cook for 10 minutes, when ready save a cup of the pasta water before draining the Spaghetti. Set aside.

  2. Dry scallops with a kitchen towel before seasoning them with a sprinkle of salt and ground black pepper.

  3. Chop dried chilli, fresh parsley and smash the garlic with the knife blade.

  4. Saute scallops in a tablespoon of olive oil or Avocado oil, toss in one spoonful of butter and add fresh rosemary and garlic.

  5. Spoon seasoned butter over scallops as it cooks . Cook scallops a minute on each side.

  6. Add linguine to scallops followed by the last spoonful of butter, chopped parsley, Chilli and squeeze in the 1/2 lemon. Spoon about three spoonfuls of pasta water over the pasta. Adjust salt to your taste. Go enjoy this beauty.
