This lamb kidney stew will be your most loved stew you'll make this year, trust me. It's warm, hearty and full of so much good flavor and best served with mashed sweet potatoes or Irish potatoes. The lamb kidneys are slow cooked to a beautiful tenderness and the carrots have this insatiable half-and-half crunch that will have you eating more than you planned.

What are Lamb Kidneys?

Lamb kidneys are offals of a young sheep which are an excellent source of iron, protein and vitamin B12. It's also low in fat and very high in flavor.

Are Lamb Kidneys expensive?

They are also actually less pricey as compared to the other parts of a lamb and Ghc 36 cedis worth is enough to feed a family of three for two days. I made a pot Sunday afternoon and there's still leftover after three of us finished lunch today. Hurrah!

What can you serve with Lamb Kidneys Stew?

Cooking time: 35 minutes

Ingredients:

400g Lamb kidneys

5 large fresh tomatoes

1 whole onion chopped

5 garlic cloves chopped

Chunky chopped carrots

Handful chopped dry sage

Handful chopped fresh celery leaves

Here's de Provence or dry thyme

3 Tbsps flour

Salt

Cayenne pepper

Let’s cook!

  1. Wash and peel off membrane on kidneys if not removed at the butchers. Slice kidneys in half and trim off any surrounding fat or bone. Sprinkle a teaspoon of salt on the sliced parts followed by cayenne pepper powder. Place in fridge for ten minutes.

2. Chop Tomatoes and blend in food blender till smooth.

3. Dice whole onion and garlic into small pieces.

4. Chop up sage and celery.

5. Take out kidneys and gently fry in 1/2 cup of vegetable oil over medium high heat. Fry in batches and avoid overloading the pan as this will steam the kidneys rather. Cook each side for 2 minutes and turn over. It must be lightly browned.

6. Using the same pan, fry the onions and garlic till opaque. Add in sage, celery and cook till you can smell the herbs cooking.

7. Add in the kidneys and flour and cook for five minutes till flour has incorporated well.

8. Pour in blended tomatoes and 1/2 cup of water plus dry thyme. Stir and cover to cook for 20mins over medium-low heat. If it’s too thick add a little water. Adjust for salt after the 20mins.

9.It's time for the carrots. Pour the carrots in after 20mins for that half-and-half crunchy taste.

10. Reduce heat to low and allow to cook for 15mins or until Stew has a deeper richer color.

11. Serve hot with mashed potatoes or rice.

This Stew will change your life! It was so hearty, not too spicy, excellent texture of the kidneys and the carrots were simply here for a good time 😆.


I had some leftover sweet potatoes from a Shepherd's Pie I had made last week and it was a smack down with the stew! Such a warm feeling of being comforted and fulfilled at the same time 🤗 . This is what good food is about.

It was a chill Sunday with a dusty Harmattan energy going on so I decided to make my own local Caipirinha using our local distilled sugar cane (hot one) and boy did I put myself in trouble! I think I'll do one shot next time😅🤧.
