Easy & Scrumptious Lime & Coconut Cake Recipe.

Simple, insane citrusy and nutty flavour all in one bite! That’s exactly how I can describe this delectable cake which requires very easy to find ingredients some of which you most probably have in your kitchen cupboard 😃.. It’s the cake to serve guests who come by during Christmas holidays and a perfect food gift to a friend in need of a comforting dessert. The aroma of my kitchen was simply transformed into a divine toasty coconut fragrance that couldn’t keep anyone away from the kitchen! 🤣 Honestly, the surprising tarty bite of the lime blends in so well with the sugar that any eater will gasp in delight after the initial munch. Guaranteed!


YIELDS: 8 Servings PREP TIME: 25Minutes Cook Time 45mins

Ingredients:

6 large limes

1 2/3 Cup of All-purpose flour

2 cups of white or brown coconut flakes

2/3 cup softened butter (half of 500g block of butter)

2 tablespoon baking powder

1 Cup of granulated sugar

1 cup of confectioners sugar for icing cake

4 eggs

pinch of salt

Directions

  1. Zest two limes and set aside. Juice 3 lime and gently slice remaining one into rings for garnishing. .

  2. Cream softened butter in a large bowl by whisking with hand mixer till pale and lightly fluffy, add in granulated sugar and whisk again until well combined. Crack eggs open and add into batter with lime juice one at a time until batter is frothy and creamy. This takes about 6minutes.

  3. Combine flour, zested lime, baking powder, salt, half of coconut flakes in a bowl. The other half is saved for the icing.

  4. Preheat oven to 180ºC and grease the base of the baking pan.

  5. Pour wet batter into flour mixture and gently stir to mix up all ingredients. Avoid over mixing at this stage . Place in oven and bake for 40 minutes or until a tooth pick inserted comes out dry. Whilst cake is baking, make the icing;

    • Combine together confectionary sugar and lime juice with the other half of the coconut flakes.

6. Allow cake to cool for 15 minutes before spreading icing all over the top. Top with more coconut flakes if available.. Garnish with slices of lime. Enjoy with your full chest!

This has to be the best cake I’ve ever baked! Perfect crumb and moist coupled with that insanely good tarty and sweet frosting! You must absolutely make this cake to impress guests coming over this New Year’s holiday!
